2 hours after I turn off the heat source or when the food reaches room temperature?
This evening, I made a chili. Normally, I let it sit for a while after turning off the heat to cool it off before putting it in the fridge. This evening, I turned the heat off at 5:30 and put it in the fridge at 7:30. Now, I had read that you don't want to let ot sit at room temperature for more than 2 hours but it didn't specify when the time starts, 2 hours after it hit room temperature or from the time it stopscooking. So, my question is, would it be 2 hours from when it hits room temperature or from the minute it's removed from the heat source?
