Pve/Pvp Class picks for single playthrough

Hey there i stopped playing in High Isle and seeing alot of stuff about ESO and kind of want to return. I got way too into pvp and disliked how it was going so i left but it made me realize i never actually focused on the stories and dungeons. I want to return with a new character and fresh start but had a few questions.

I saw DK got a rework and wanted to know if a destro staff/sword and shield would work well?

Also i always wanted to try a sword and shield templar but disliked how it seemed the game really wanted you to be a beamplar or a jabplar. Is there more variation to the class? Or i guess can any weapon be mained now?

Lastly necromancer was on my list but disliked that the summons werent permenant and class felt kind of clunky. But i do like the idea of a death knight playstyle. So any necromancer players with advice helps too!!
