Fermented pineapple drink, help me find the recipe!

Ask r/Tahiti

While on my honeymoon in Mo’orea last year, we met up with a local guide around Maharepa(Mary, you are awesome!). We hiked through the valley to a waterfall and she fed us before and after, while telling us stories of her family’s history. It was great! During the post-hike meal, she brought out a jug of somewhat alcoholic, fermented pineapple juice. It was very much similar to tepache, but I don’t know if French Polynesia has a traditional version of this. IIRC it might’ve just been simply pineapple rinds, sugar, and water(possibly lime too? Idk.). It did not have cinnamon, which most tepache recipes seem to include.

Between this drink and poisson cru, I’m really missing all the food and experiences of Mo’orea and would like to recreate them as best as possible at home!
