Need help deciding on travel destination

Need help deciding where to do honeymoon

Me and my fiancee are stumped on where to do our honeymoon! We were originally considering an all inclusive somewhere tropical like st lucia, but i was getting worried about getting bored. My fiancee hates just sitting at a beach or pool and we aren’t big drinkers, we felt like other than an occasional excursion, that’s all there really is to do at all inclusives like that. We then were thinking Europe trip but due to work conflicts we have to go in January and it seems like most of Europe is cold and rainy in January. We did a christmas switzerland trip a couple of years ago and really liked it but we did say we got sick of the go go go and constant hopping on trains, changing hotels, etc, and also some of the cities were a bit too vacant that we got bored. I’d like something kind of in between a europe hop around and an all inclusive. The option to stay at your hotel and chill by the pool or at a spa and relax but also a lovely city to walk around and explore. We are big foodies so that is a big deal to us. I’m very laid back but my fiancee is adhd and has to be entertained. Thinking either just doing an all inclusive and hoping he doesn’t get too bored or going to like southern italy or spain or portugal and staying at a nicer place that we wouldn’t mind not leaving if we get tired of the hustle and bustle. No budget, Jan 2027. Any countries, destinations, formats, recommendations are welcome! It doesn’t necessarily need to be hot/warm but i definitely don’t want it to be a winter snowy vacation.
