Recommendations for Geyser-World?

Looking to start a friendly multi-console Geyser world between friends, and I was considering installing some terrain or vanilla dungeon-based mods that would remain post chunk-gen when I removed them. What suggestions would you guys have for things that break up the overall monotony of vanilla mc?

Willing to accept interesting spigot suggestions as well, since we will be running a paper server.
