How serious should I be?

Question

I got diagnosed just a few months ago, but I’m struggling with how serious I should be taking this now and in the future. Obviously because of the time frame my intestines are not healed fully, but other than that I have been eating completely gluten free with no slip ups or “cheat days” (I know cheat days do not exist with celiac don’t worry).

I am asking this because I am young and in college, and I don’t want to live the rest of my life only being able to eat things from a certified gluten free kitchen or brand. For example, on campus we have a taco bowl place (not chipotle) and I ordered a bowl that should have been gluten free but was definitely cross contaminated or maybe a seasoning they used had gluten in it. I have basically been ordering things from places that should be gluten free but they can’t technically say it won’t be cross contaminated. Is this okay in the future, or do I really have to live without ever just trying and seeing if I get sick? I am feeling very hopeless with this just because of how strict everything is.
