Trip around the Mediterranean, any recommendations?

I've found a few recommendations for Rome and Barcelona, but looking for recommendations for other places we're hitting on a trip this summer. So far I've got Faro, Barnum, Materia, Cafe Merenda, Mati and Sensorio in Rome, Lot 61 in Malta, and Nomad and Three Marks in Barcelona.

Stopping in: Barcelona, Valletta (Malta), Athens, Ephesus, Santorini, Mykanos, Olympia, & Rome.
