Jackery explorer 2000 for plugging in camper?

Am I crazy to think this is possible? I am obviously not considering running the ac or even the microwave. I mostly and just looking for a way to run my mini fridge that is plugged into my camper off grid. So I would use a 30 to 15amp adapter and plug the camper shore power into the jackery. Is this possible and would it work decently?
