Having a hard time looking for a place with blackened Redfish or Red Snapper topped with etouffee.

Got that craving for a food I loved. Looked through Google to see if there was something, but I'm hitting a wall. I know saltwater seafood isn't as easy to come by here, but I figured maybe someone would be making it and someone might know where it's at.
