Trying to find a specific book

There was a book I used to check out a lot when I was a kid from my local library and I'm trying to find it. It was a decently large book with a bunch of sci fi paintings in it that had short stories written about the paintings. I remember distinctly two paintings of the TOS Enterprise and one of the stories had the ship as a sort of functional museum piece that a bunch of kids decided to steal to go on a joy ride and accidentally flew it into the sun. There was also a painting of a large tiger striped ship and an skeleton in an astronaut suit buried in the sand with a large structure behind it. If anyone knows of this book I'd appreciate letting me know what it is called. I also think it had a silver cover jacket but not totally sure. Thank you for your help 🖖🏻
