With all the remakes, what’s the actual canon for the newer RE games?”

Probably a dumb question, but I’m new to the franchise and got kinda confused about what’s actually canon for the newer games (from 7 onward). Like, with the games that got remakes/remasters that changed the story (at least I think they did), which versions are actually canon for 7, 8, and 9?
