Zero restaurants allow for any notes or customizations anymore. Why?

One thing that really bothers me (sushi restaurants mostly) is that there is no option to add sauces or any notes. This used to a thing and it’s very rare for this to be turned on anymore.

I have ordered from literally every single sushi restaurant in my area and 1/5 times they include soy sauce packets or wasabi. Very basic things that come with a meal and don’t cost extra. What is the issue? They don’t even have a part of the menu for these add ons. Has anyone noticed this?
