Please help me understand the use of Sancho

My Mexican coworkers use sancho when others sneeze. I generally understand the meaning of the word but not why it is used in this context. I would like to maybe use it also with them but I'm not sure if it would still be seen as funny coming from a "gringo" (I'm extremely hispanic but am a no sabo kid so unfortunately I still have gringo status with them)
