Why kids hate vegetables

Turns out there's actual science behind the dinner table standoff. Research suggests kids naturally prefer sweet flavors, and a lot of vegetables have bitter compounds that children can be more sensitive to than adults. Throw in texture aversion and a natural fear of new foods and you've got yourself a full-on veggie revolt, every single night.

The thing that actually helps? Repetition without pressure. Some research estimates it can take up to 10-15 exposures before a kid even considers accepting a new food, so the trick is just keeping it low stakes, whether that's offering carrot sticks as an after-school snack, letting them tear lettuce for dinner, or growing something small together. The less of a battle it is, the more likely it sticks.
