Looking for the best place in Europe to stay 1–2 months (budget €1k, good weather)

Between September to December, I'm looking for a spot in Europe to settle down for about 45 days. somewhere with a maximum rent of €1,000 per month and where the weather is generally nice. If there's a small startup/tech ecosystem that would be great too. I was thinking about Croatia (specifically Dubrovnik), but I'd love to hear your recommendations!
