Inmates working around/with food in kitchen

What are your thoughts on having an inmate with HIV preparing meals for the population or for staff?

At our jail, the officers can eat meals from the kitchen, for reference. Also, this week, we are celebrating correctional officer appreciation week and the inmates prepared the side dishes.
