Bulk Vegan GF Baking Ideas

Hey y'all! I am helping bake a bulk order (about enough to yield 72 servings) of a vegan, gluten-free dessert for an event. I am also making more non-GF vegan dessert options (Rice Krispies treats and chocolate chip cookies). I'm struggling to find a good vegan gf recipe that would work well for baking in bulk. Does anyone have tried-and-true recipes? Very open to flavor profiles and all that, but since I'm baking a lot (and don't have much experience in baking in bulk), a simpler recipe would be better. I was initially thinking of a carrot cake cupcake or some sort of lemon bar! I have baked GF and vegan desserts in the past, but they're certainly not my specialty. Bonus points if you have any tips that can be made ahead of time (or at least have certain elements made ahead of time!)
