Someone asked me what my favourite meal is and I have thought about it with a level of seriousness that should probably concern everyone involved.

The answer is a fish taco I ate in San Diego in 2022 from a roadside stand that had three plastic chairs, a handwritten menu, and no name I have been able to locate since. I have looked. It does not appear on Google Maps. Im starting to wonder if it was a hallucination brought on by sunshine and jetlag and wanting to believe the world was good.

It was not a hallucination. I know this because I remember every detail. Crispy battered fish. Cabbage slaw with lime. A sauce that I can only describe as someone who actually cared about sauces made this sauce. One slice of avocado at the precise peak of ripeness that one golden day between not yet and you left it too long. A tortilla that was warm and slightly charred at the edges. Two dollars. I ate three of them standing on a pavement in sunglasses, definitely inconveniencing pedestrians, completely not caring.

I have thought about that taco more times than I've thought about most of my important decisions. I attempted to recreate it four times. I have failed four times. Not badly. Just not that. Never quite that.

I have eaten in actual restaurants since. I have had food cooked by people with skills and training and opinions about seasoning. None of it has touched a two dollar fish taco from a place that may not technically exist.
Here's what I decided: the best meals are accidental. You are not trying to have an experience. You're just hungry and standing on a street and something happens to you and afterwards the world is slightly different.

Tell me yours. I am collecting them. Drop it in the comments. Best meal you ever had. Go.
