After asking advice and reading replies I went from Ubuntu server to proxmox for my aged NUC (512gb SSD OS, 2x USB HDD) home server.
So far
Jellyfin (accesses USB 1 and 2) LXC
Qbit + WG (accesses USB 1) and vsftp (accesses USB 1 and 2) sharing a LXC
I'm wondering what's the best option for manual file management with a GUI?
Is there a tool to add, do I add another LXC with xrdp, minimal WM/DE and Thunar/Nautilus/alternative, or LXC with webmin/cockpilot/alternative?
The other option I guess is plug both USB into laptop and sort them out and then plug back in and start them up but that's a once off for the big tidy, maintenance I want remote access.
I'm trying to avoid *arr route as the NUC is old and I have time to manually grab what I want and put it elsewhere (it's not a giant library but parts need cleaning up, sorting out, renaming, etc).
All help appreciated
Edit, thank you for the help, took a few people's advice and used a minimal LXC and file browser. it will do for now and is much faster than I thought. The browser interface works with all the household devices without needing me to remind family how to reconnect anything or find it. You champions.
