Unexpected behavior [ De'Longhi dedica Ec885.m arte and kingrinder p2 ]
So I have a De'Longhi dedica ec885 arte with a non pressurized basket and I pair it with a kingrinder p2. i adjusted the grinder to 23 clicks and I use wdt I stamp as level as I can and a puck screen. The shots come out extremely sour and trying to grind finer at 20 clicks for example it's both extremely sour and bitter I had the grinder dialed before it made great extractions but changed the bean And tried to dial it to the new beans and then When I repurchased the same type I lost the configuration of the grinder ( this is only to show that the setup used to pull decent shots ) . This is all not the problem the problem is when I try to dial the grinder coarser at 25 clicks the shot chokes I even tried to reduce the dose and it would only start pulling at 16.5 compared to the previous 18 grams I'm a newbie to espresso making but I have made decent espresso from this setup before and it feels like it defies the basic logic ( coarser grind = faster shot )
