Need Denver date ideas that are actually unique/surprising for a road trip with my girlfriend

Hey everyone, I’m driving up to Denver soon to surprise my girlfriend with a little road trip/date weekend and I’m trying to plan some things that feel memorable instead of just the usual “go eat downtown” type stuff. Coming from a small town I just have no clue where to even start.

She’s from the area, so I’m specifically looking for things that are:
fun/new/exciting even for someone who grew up around Denver
good date spots or experiences
scenic/weird/adventurous/cozy are all welcome

It’s ok if they involve a little driving outside the city (I’m already driving 8 hours so another hour or two doesn’t matter)

Could be:

mountain towns
cool late-night things
unique restaurants/cafes/bars
hot springs
drives with amazing views
random experiences you’d actually remember
seasonal events
stuff that feels cinematic/main-character-ish lol
I’d especially love ideas that feel thoughtful or surprising rather than super expensive.

For context, we’re both pretty adventurous and down for spontaneous stuff. I’m trying to make it feel like one of those weekends you remember for years.
