New to HA/Smart Home - Advice on plan

Hey everyone, I am new to the smart home setup using home assistant. I am technically inclined, but have never set any of this up before and will figure it out once I have actual products to work with - I'm a learn by doing, not by reading type of person. But we're building a new home this year, and I am planning out everything right now so that when it comes to procurement time, I can just buy and not research and get more into my own head.

We will have a full unifi setup - DMP, AP's, etc, etc. I am looking at some rooms having just standard recessed bulbs, while other areas having Phillips Hue bulbs because the wife wants to change colors for holidays and other crap. We won't be using any other brand smart bulbs other than the hue bulbs, unless there are better options that I am aware of that are reliable, good CRI, and higher quality. I am looking at around 100 Inovelli switches, looking at the Blue Series for the Zigbee protocol to mesh with the Hue bulbs. We will have various other systems, like temp/humidity sensors, door/window sensors, glass break sensors, and a security system integrated all into the system. I will have a mini pc running home assistant on it to handle the entire ecosystem. For all the sensors, we can go with any protocol - zwave or zigbee. The house will be located on 17 acres of land, so wifi interference from other households won't be a problem.

Where my question comes in, would the zigbee setup be a good one with home assistant and the overall network? I would be binding the lights to the Inovelli switches so that when I'm not home and the home assistant pc is down because the kids decided to unplug it in the basement, the wife isn't freaking out that she can't control the lights. For the switches, would the blue series be just fine, or should I do some kind of combination of blue and white, with say the white controlling the ERV with a shelly to put it into boost mode for when the said wife takes a huge dump and needs to evacuate the bathroom? Should I go with z-wave sensors for the better wall penetration, since the house will be pretty large, or just stick with zigbee and have it run on the mesh network?

Like I said before, this is just a learning post before I start dropping money into stuff, and looking to learn from others that have the experience so that I can share my experience with others in the future as well.

Thank you in advance!
