Hong Kong - solo counter dining recommendations

I’m off to HK in the summer, and keen to add a new experience to my HK Michelin list. I’m looking for something that’s good solo, has chef’s table/counter style seating, and preferably isn’t Chinese cuisine. Already been to Hansik Goo and Sushi Shikon (and others, but those two were the ones that spring to mind as possible suggestions).
