Restaurant “Sublime” (Guatemala City) is hosting restaurant “Karai by Mitsuharu” (Santiago de Chile). Anyone have any experience with restaurants hosting another restaurant?

I will be in Guatemala City end of May and made a reservation with Sublime (LATAM 50 Best no. 19). After I made the reservation I got a message saying that they will be hosting Karai by Mitsuhara on that day and that they are serving a different menu (blend of Peruvian and Chilean cuisine). I was looking forward to the Sublime tasting menu because of the use of local ingrediënt and influences, but I’m also intrigued by the exchange of chefs from another restaurant.

The thing is, I just don’t know what to expect. Can I expect the same quality as when I would go to each restaurant separately?

Does anyone have any experience with one restaurant hosting another?
