What Should I Do In My Minecraft World?

I've been playing on my Minecraft server for a while and I'm starting to get bored. I already have all the farms I need and maxxed out gear. Do you guys have and ideas on what I should do? Maybe some challenge? Nothing too extreme though.

Thanks!
