Reuse my 2020 gaming PC or dedicated homeserver ?

My current setup :

• Old gaming PC (2020)
• New gaming PC (2026)
• DS418 NAS
• Some ubiquiti equipments for networking

My NAS has hit its limit for Plex and can't do docker/VM without tinkering & perf issue.

I would like a dedicated homelab server and I see 3 possibilities :

1. Reuse my old gaming PC (32GB DDR4, RTX 2070 super, equivalent/same-year i5 CPU)
2. Buy a dedicated NUC (Intel NUC 13 ? Minisforum ? GMKtec?)
3. Buy a mac mini

Last solution seems to be the worst, but I'm tempted to start developping on iOS, so just throwing it in there.
