Publish old episodes to Youtube - chronology, publication date?

Cannot find the answer to what seems like a simple question, I hope someone can help 😄

I want to put my podcast on Youtube. But I am concerned about how to:

- change or "back publish" the publication date (they will look dated and weird if they all show the date of upload)

- related, how can I manage the chronology (I have already uploaded 2 episodes from current season, now I want to upload the preivous season but that will show out of order?)
