What are some cool anniversary ideas?

tldr: my (21f) two year anniversary with my boyfriend (21m) is in june and i need advice on where to plan a trip! details about interests and likes are stated.

my and my boyfriend’s 2nd anniversary is in july. we are planning on taking a trip the 6th-10th, and i am planning it. last year, we went to elijay georgia, a super small cute country town. we live near knoxville tn and like more country areas, but we also like sight seeing in the city.
i’m at a loss of where to go this summer. i was thinking confusion hill, as we both love gravity falls, but it is too far away for us to drive to and still have enough time to enjoy where we are. i also looked into the dark sky reserves as we both love stargazing, but he can be weird about being outside at night. i’d like to only drive 12 hours max, but that can be a little flexible.
he loves anime, mtg, dnd, ren faires, etc. he’s also studying to be a mechanical engineer and loves all things robotics. we both love nature, and want to do more beginner hikes and work our way to more advanced ones. but also cities with a lot to do that also have country outskirts would be nice. we are also 420 friendly and love the little “hippie” towns.
