Offer with complexities - how to decide?

Received an offer at a Biotech the same week they confirmed they were being acquired by a larger European Pharma company, with no US presence.

New job would come with a 12-15% salary increase, fully remote and greater opportunity for growth with the ability to wear several hats in a growing organization (at least that was the plan). Hiring manager said they still want to move forward as the acquisition wont close for 3-4 more months, but has been completely transparent that they have no idea of scope of change once acquisition is finalized. Could be business as usual with no change, could be new parent company lays everyone off, no way to know at this time.

I have decent pay and benefits along with job security in my current role, but my current boss has confirmed there’s really no development opportunity in the current org, and nothing seems likely in the future here, so feeling bored and stuck.

I cant decide if taking the new job is worth the risk. My position is really niche with these types of jobs not frequently available, so seems like a great opportunity. I want a new challenge, but not if it might put me out of work a couple months in and who knows for how long after.
