Fine after eating gluten

I have been gluten-free for three years. In that time I probably came in contact with gluten two or three times in the next day. I got a canker sore. I have been eating 90 to 95% clean. Nothing processed in the last year. The other day at a party I ate a cupcake that I thought was gluten-free and it was not. It was the best cupcake ever lol and I was terrified. I would have a reaction. And here it is two days later and still no reaction. Everything I read says gluten still is not good for Hashimoto’s so I’m not planning on going back full force. I’ve also read it’s possible maybe my gut is so clean that I’m not as triggered if I consume some. Just wondering if anyone else has ever been through this or has any insight on it. There’s a couple things on my list that I would love to have, but I won’t go back full force. One of those things is I just want to drink one regular beer lol
