Looking for a new single player game. Any suggestions?

As I stated in the title I'm looking for a single player game to play after finishing my last game (Elden Ring) which I thought was amazing. I don't have a lot of experience with singe player games but ones I liked were:

Elden Ring

AC: Odyssey

Subnautica

Are there any other suggestions for games I should try? I've been looking at RDR2 but I get the feeling it will be too much story for me since I tend to prefer the gameplay aspect.
