The single best dining experience in Italy

Hi!
My girlfriend and I are currently backpacking by train from the French Riviera to Croatia. We’ve been travelling on a very tight budget, especially when it comes to food, eating mostly bread and the cheapest cold meats or dry pasta with supermarket sauce.

With my birthday approaching, I’ve been offered the opportunity to dine at a restaurant of my choice in Italy, without budget. I am very open and curious about food, and I always greatly enjoy discovering new flavors and dishes. The goal of this dinner is to have the biggest culinary Wow factor as possible while also discovering a part of Italy’s culture. I’d like an experience where I get to taste atleast 5 dishes; somewhere that offers a great table d’hote or a « small plate » menu that allows for many dishes.
In the next month, I’ll be staying in Florence, Bologna, Verona, Padua and Venice. I would like some recommendations at where and what restaurant would offer me the best experience.

Some precisions:
- We can’t really leave these cities for this dinner due to being restricted to public transport.
- My girlfriend really isn’t into seafood, to my demise.
- We’ve already planned to eat out a bit in Bologna due to its reputation. So I’m thinking maybe I should take this dining experience to discover another region’s cuisine, like Tuscany.

Thanks in advance!
