Moving to Mexico?

I-130 & I-485 (Family/Adjustment of status)

F1 married to USC. I came here on F1 legally on 2022, attended school for two years. Overstayed the student visa for two months after graduation, and married my USC husband & filed 485 at Nov 2024.
We lived together, owning a house, and filed tax jointly.
I485 has unfortunately been pending since Nov 2024, we attended the interview this April. During the interview, the officer RFE us for the medical record because something is invalid. I redid the medical exam and responded to RFE in mid April, but radio silence ever since.
Apparently the memo got us very panic, we truly love each other and don’t want to separate. I am a Chinese citizen, we considered moving to China but it’s very tough to get Chinese green card or visa for husband.
My husband is a dual US & Mexico citizen. He has family and friends in Mexico too (and apparently it’s very easier for spouse to get Mexico green card).
In the worst case scenario, if my i485 got rejected and redirected to go through the consular process, is it possible that we can move to Mexico and do it there? So that we don’t need to separate?
Or does it has to be done from China? But even that I might still be able to stay at Mexico with my husband and only travel back to China a few weeks for the interview?
Any insights are highly appreciated
