Scorpio emotions?

We met online, and the guy turned out to be a Scorpio. We were about to meet up almost immediately, but he canceled it himself because he got jealous of something, loool! And that was despite the fact that we were absolutely nobody to each other.
But we kept talking anyway because most of the time I didn’t really care about his quirks, both back then and later on. I doubt anyone else would have even bothered to keep talking to him with all his mood swings, when he would switch from being emotional to completely cold. I feel like it only worked out like that with me, honestly.
In the end, we were texting for about six months, and meeting up wasn't even mentioned. It was a weird feeling, like you are waiting for some kind of logical progression from this communication, but nothing happens. How does it usually go when you meet someone online? You go on a date, ask about each other's interests, and all that stuff. With us, it all turned into a format of purely casual chatting and light banter. Well, just like friends, I don't even know what to call it. True, his jealousy would still kick in from time to time, and I could never tell if he was being serious or not (but he probably was serious). It was the kind of story where everything was easy and complicated at the same time. But despite all that, the emotions were just there and that's it. You just keep talking anyway without making a whole tragedy out of it, and I could easily text him first after something like that.
Later, we started calling each other and could talk on the phone for hours, and then we finally agreed to meet. I arrived at the embankment, didn't see him, and sat down to wait, checking my phone. Less than five minutes passed, I looked up, and he suddenly approached as if nothing had happened and calmly dropped his first line: “So, did you wait for me?” LOOOL, it was so funny! On that first date, he was just quiet, calm, observing, and mostly listening.
But on our second date, he completely out of nowhere started taking my hand, even though he looks like a quiet guy. I playfully pulled it away, it was all in a flirty, playful way, but he kept taking it anyway. Along the way, he could abruptly stop and just give me a really tight, intense hug, and all that stuff!!
In the evening, he texted me that everything had changed. And he seemed way more serious in his texts. Do they always flip the switch that fast? 😅😅
