What Symptoms do you get when Glutened?

I'm having a devil of a time sorting out if what I'm experiencing is an exposure or not.

Within minutes of eating:

-Headache

-brainfog

Second time this has happened, second test if you will, if history is any judge the worst of it will be gone in the next new hours.

On such a level it's debilitating.

Really wish test strips were more affordable. But being in Canada spending $100 to get a few test strips to test $40 in food doesn't make sense. Just have to remove the items in question from my safe list.
