Are these restaurants good for non-beef/pork eater (or) suggest alternatives?

Food

Ciao Bologna!
First of all, I love your city. I was there in April (first time in Italy) and had it as a base to travel to Florence and Parma. Bologna was simply the best as I felt more at ease as a solo brown traveler...so thank you! And I will be back again this month for 4 days of travel :)

I want to get your inputs on the restaurants and Bolognese food to try as someone who doesn't eat pork and beef. Last time when I visited, apart from eating Gelato all the time, I ended up eating at the below 2 places (multiple times) and these items,

  1. Trattoria dell' Autotreno: I loved this place both for the food and the service (the way they treated me and seated me). I went there twice and exhausted their vegetarian options :). I had Tagliatelle ai fungi porcini and tortelloni burro y salvia across the visits (no secondi). They seem to be closed now :(

  2. Pasta shop in Mercato di Mezzo: I liked it as it's run by a Coop. I had tortellini with fig and ricotta in a butter and sage sauce as well as with fungi filling

For this month visit, I have narrowed these three restaurants (thanks to old posts here),

  1. Botanica Lab Cucina

  2. La Svolta

  3. [If I could get a reservation] Trattoria di Via Serra di Tommaso & Flavio

What do you think of these options? Do you suggest a different ones to try traditional Bolognese food (that is no beef and pork)?

Regarding other foods to try, I have tigelle on my list. Is there anything else you would suggest me to try? Is it feasible to get lasagna without beef/pork anywhere?

Grazie!
