These came out actually really tasty. For stuffing I used the zuchinni innards, a yellow pepper, tomato and seasoned the chicken with garlic powder, italian herbs, a pinch of oregano and thyme. I was seriously thinking i'd fucked it up when sauteing the stuffing, but once it came out of the oven, it was delicious.
The chicken, chester cheese, parmesan cheese crust is unmatched.

Gotta work on my presentation though. They deserve a second chance. Unlike my father.

I hate how boomers and gen-x lack any compassion whatsoever in their shallow and narrow worldview. Our relationship has grown so strained and he just makes the most hurtful comments ever, specially when im convinced he is opening up to treating me like a person, like a son, and then he blindsides me every fucking time.

I'm done. Ive cried enough, ive tried enough. Ever since he kicked me out, a year ago, he hasnt called or even started a single text or conversation. I only see him because I love visiting my mom.

When my sis moved out with her bf, he turned into Steve Martin in Father of the Bride. He warmed up to her like magic. He gave them gifts, appliances, advice, he invited them over for regular dinners.

Me? Im just disposed of. Out of sight out of mind. Just like he did to my dog. Poor thing died of exposure and self inflicted spine damage, he left him in a plot of land for years. I carry that guilt.

But I'm done.

I'm actually very happy and proud of how my creation turned out — something my father will never be. Chicken Parmesan Stuffed Zucchini Boats.
