Optimal Cafe Setup??

So with the addition of Lacrimosa who has a fons boosting life skill and also we now have more total characters than employee slots. What is the current optimal setup for the hourly pay rate?

Im not even close to maxing out the life skills of my employees but i was wondering what 5 dishes yield the highest combined total hourly fons.

A lot of the characters have Traffic related skills and some have traffic affected as a % rather than a flat amount however it tends to seem like you'd be forced into changing your menu and thats where im wondering what would be the best setup?

My 5 Dishes are the 5 most singularly profitable dishes with the exception that the singularly least profitable is the main dish just below the beverage because of Nanally's skill

But theoretically would those 5 dishes be different with certain characters life skills?

What is everybody else rocking or has anybody crunched the numbers pre-lacrimosa for what gives the highest payout?
