How many "tip based" employees actuall declare their income to SARS?

It's been a long time since I relied on tips for my income, but apparently with electronic and card payments being the norm nowadays, that money is traceable.

Do the restaurants / bars handle the tax on your tips, do you manage it yourself or is it still largely just undeclared?
