How do I get a job when I don't meet 100% of requirements listed in the JD?

5 yoe and I get rejected for roles that require Azure instead of AWS or polars instead of pandas. I tailor my CV as much as possible, but there's nothing I can do about not having experience in a specific technology. Imo if I meet 70-90% of requirements I can learn the rest on the job, but recruiters seem to want only people who already know everything. How do I get back into the job market without referrals?
