Casual Multiplayer Recommendations

A few friends and I have been playing against the AI and while we are improving, I was wondering if there are any fun custom rule sets or game variants that people play? Right now it’s about 3-4 humans and we usually run against an identical # of AI. Anything from challenging to silly is appreciated!
