Recent adoption hasn’t left crate for almost 7 hours

I know cats can take a minute to adjust to their new environment but I’m worried about the fact that she hasn’t had any water pretty much all day. I put her in our guest bedroom with food, water, and litter box on the opposite side from her crate. I’ve checked in on her every few hours and she’s very receptive to pets but still won’t stick more than half her body out of her crate. How long is too long? And when should I be concerned?
