My iPhone was stolen -> I bought a new one

My family and I took a trip to Las Vegas and while there my phone 17 Pro Max was stolen :( I went through the motions of putting it through lost mode and erasing. The lost mode worked but when I went to erase it (‘I knew I wasn’t gonna get it back’) it didn’t work and said pending. I knew my next step was to report it stolen, one to get a new phone with insurance but also to stop the phone from receiving calls and texts. We eventually went home and I got my new phone (I set it up using my computer). I immediately change all passwords (especially my Apple ID password) and canceled my cards. Sorry for the long background information but my question here is if my new phone mirroring my old one? Like if they were able to hypothetically guess my 6 digit pin and unlock my phone would all my new information be on my old phone? Sorry if this is a dumb question
