I've been cooking and baking professionally for over 20 years. There are three things I can't master, and chocolate chip cookies are one of them. When it's PB chocolate chip cookies I nail it every time. But no matter what recipe I try for the basic cookies, they end up flat and too squishy on the inside. This time around I halved the basic Toll House recipe, because it makes way more than my family will go through.

They're flat. They're a bit soggy in the middle. I added one variation - one extra egg yolk for a richer flavor. I omitted walnuts, so I added an extra tablespoon of flour. I let them rest on the cookie sheet for about 3 minutes (and lightly pressed extra chips for aesthetics). They taste great, but they're not the cookies I'm trying to make. I've tried a lot of different recipes. The Toll House recipe is what I grew up on, and these don't look or feel like the ones my mom made for me as a kid at all.

I did have to refrigerate the dough for a little bit, since it got wayyyy too hot in our house before we turned the AC on for the day, so maybe the humidity and room temp had something to do with it, but I let the dough come up to room temp (71 degrees) before spooning and baking them.

This is such a basic thing. I've tried a ton of recipes and I mess it up every single time. Please help. My step kids love chocolate chip cookies, and I want to make them amazing for them.

I can't make chocolate chip cookies to save my life 😭
