Do you capture in OTB or not?

Okay, so I just started chess blogging and content creating, but I’m an experience player and have played OTB “street” chess and competitive play at all levels.

I recently posted a video where I captured my opponents king because he didn’t move out of check, and people lost their minds. It was 5 min blitz game.

So my questions:

1. Do you feel like you should always call check? (When playing Experienced players of at least 1500 elo and higher)

2. Do you capture king in blitz or reset for illegal move?
