Timeline of Last Pay and Quitclaim

Good day!

I would like to ask what should be the timeline of final pay and quitclaim. My employer asked me to sign a quitclaim, with a statement saying I have already received my last pay even if I have not received it in reality.

The instruction is to sign the quitclaim and have it notarized before they credit my final pay. Should I sign the quitclaim or should I insist the release of my final pay first?
