How do you generalize a discrete function to make it a continuous functions

Like cases such as the factorial operation/function that only works in the classical/intuitive sense with natural numbers, but was generalized and made continuous , with the main function being the gamma function. If there are infinite ways to connect discrete points how can there be a correct generalization to a discrete function?
