Chania for a place to stay?

Only have 5 days to explore so we are going to pick the west side of the island. Leaving from Chania anyways.

Samaria Gorge is a planned hike but trying to determine if it matters what area we really pick to stay. It sounds like this is a single long day based upon the reports I am reading.

We will have a car and don't mind a little drive. Is it better to stay outside Chania, Kissamos, or does anyone have personal recommendations? We are looking for an Air BnB type place so not the typical hotels. I will definitely need to do some laundry :)

Want to do some exploring, get some beach time, walk the towns, and so on. Don't care about the party scene or organized tours. Maybe a quick trip to a winery too.
