Disney World help Not seen in FQ page

My wife and I are thinking of going to Disney later this year or early next year. But there are a few things that would determine if we go, and they all land on me.

I’m in a wheelchair. And due to an incident a few years ago, I can not be touched without panicking and having a complete meltdown. Is security going to try to touch me? If they were to try to touch me we would have to leave and potentially cancel the while trip.

2. I don't do well with people, and tend to have several panic attacks in large crowds. Is Disney super crowded in winter like it is in summer?

3. Are there places I can go to cool down if I have a panic attack?
