Teachers who teach tech-free, how do you make your lessons entertaining?

Hello, I am curious how teachers who like to their lessons to be computer/tablet/AI free make their lessons entertaining.

I teach EFL, one if not the most disliked subject by students in my country, and we are encouraged by law and by schools to use technology no matter if you teach EFL, Math, Science, etc. But I want to go techfree. How do you make your students not go this is borinnnggg all the time? They are used to working with computer so when I use any type of books or hands on projects they hate it.
